I dye my hair at home and usually wait at least 24 hours before shampooing. Just to be safe.How long after getting red highlights should you wait to was your hair (with color safe shampoo)?

You don't have to wait, at least not if the salon did a good job. Don't be afraid if you see some of it wash out though...its just extra dye coming off.
2 years sounds about right.
